Dream Dinners – Act 1 Steak Caprese

Act 1 – Steak Caprese

Dream Dinner #1

We made our first Dream Dinner meal a few nights ago. It was simple to make – basically broil steak and add a side vegetable or two, which was garlic mashed potatoes and edamame beans that night.

I placed the steak on a broiler pan covered in foil and followed the simple instructions that came with the meal.
1. Place a spoonful of tomato sauce on top of each steak
2. Place a dollop of pesto sauce on the tomatoes
Broil the steak for a few minutes – alternatively you can broil the steak on one side and then flip before doing these two steps (1. and 2.).

 3. Place a slice of mozzarella (or provolone) on top and broil for a few more minutes until the cheese is bubbling.

Our steak was tender and perfectly broiled – not too pink and not too over done. I would definitely order this meal again.

Two of us ate every bite (quickly) leaving almost no evidence that the steak had been there. That left McKinley who, by the way,  is the slowest eater in the world and was still working on his entire dinner. I swear he can chew a piece of meat for 20 minutes. He eats slowly to begin with but to add chewing meat forever, well, you get the picture of how long it can take him to finish a meal. We had moved on to cracking jokes and other meal time stories which brought a lot of laughter. Unfortunately it also brought a choking fit for McKinley and he ended up barfing at the table – all over his plate, which was full of the remaining, beautifully cooked Steak Caprese.

Even this whole incident with McKinley didn’t damper our enthusiasm for this meal, but it did make it more memorable. The moral of the story is steal his remaining meat before he laughs too hard and barfs!!!
