We have worked our way through a few more of the Dream Dinner meals from the July menu – mostly when I have no brilliant ideas for dinner and I pull one of those out thinking – “Oh, this will be easy, I don’t have to think about dinner.” Which happens to be how it goes – very easy, tasty dinners.
Act 2 – Lemon Villa Chicken with Couscous
There was a lemony sauce for the chicken along with couscous in a separate bag. I added more chicken that I already had. I find that the sauce for the three serving portions is plenty even if you add more meat to it. With this meal, I found out my kids no longer like couscous – not because of this meal or anything, but because they don’t like how it sticks together in general. Who knew. I still love couscous and I like it much better than rice. This meal was OK – I think it would be better with a thicker sauce like the sauce on lemon chicken at a chinese food restaurant – it smelled like that but didn’t taste like that. Unfortunately, I can’t find any evidence of this meal other than my Dream Dinner receipt.
Act 3 – Harbor House Cod
This dinner disappeared very quickly – perhaps because I served it after football practice when all three of my kids were about to eat the table leg. Because I wanted to try several types of the dinners, I ordered all three serving sized dinners. I added more fish and mixed vegetables to this pan before cooking the whole thing. It was incredible. All three kids had seconds and all of the fish disappeared, which surprised me. It’s a bit hard to tell from the picture but there is penne pasta at the bottom of the pan with a sauce over it and then the fish and vegetables top the pasta. There is a sprinkling of parmesan on top of it all. I think we should have stirred the pasta and vegetables to cover it all in sauce because we seemed to find the sauce in pockets. We would definitely order this one again. It also made fabulous leftovers the next day.
Act 4 – Savory Grilled Pork Chops with Sweet Potato Fries
I wasn’t at home when Greg and the boys cooked this one – all I can tell you is they loved it and would eat it again. This one is from the Dream Dinner Classic menu.
